Tyme Foods' pure blend contains 30% zaatar (hyssop) herb (also referred to as wild thyme, Syrian or Lebanese oregano) 30% Sumac, and 30% roasted sesame seeds, and 10% unrefined Mediterranean sea salt.  It is a gluten free zaatar mix. The zaatar herb is grown from seeds of wild zaatar found on the mountainous hills of Southern Lebanon and is known to produce very flavorful zaatar herb because of its high essential oil content (about 1 gram per ounce, and 4 to 40 times multiple the oil content of zaatar herbs from other regions.)  The sumac and sesame are also grown in Southern Lebanon.

This is a classic artisan made zaatar mixture as compared to low quality commercial and common grades, which often contain substitutes to the wild thyme/hyssop which is native to the Middle East, and contain wheat and other (often unknown!) fillings to increase volume, citric acid or other artificial substitutes in place of the Sumac.

We offer this zaatar in a relatively generous eight ounce portion because we are confident you will enjoy it beyond a seasoning or spice.  Try it as a dip food by dunking fresh bread or vegetable into olive oil then the zaatar - sprinkle it on salads, soups, and sandwiches - stir it into a yogurt - knead it into dough and pastry - and experiment with its many culinary possibilities.

love this blend!

I made a frittata with kale, summer squash, olives and feta. The Za’atar added an authentic mediterranean flavor with a tangy edge to it! So delicious! I also added it to my sourdough bread baking- YUMMY!!

Awful taste

We regret you disliking the zaatar so much. Once in a while, we get a reaction or a question like wether its an acquired taste, and maybe it is for some palates. Can you tell us how you used it? Do you try simply dipping a piece of baguette or pita bread in good olive oil then the zaatar? We be happy to refund you what you paid, less shipping, per our money-back guarantee. Best Zaatar

I have been buying this za'atar for some time now, and it remains my favorite by far. I eat lots of it, especially with good olive oil (such as that available from Eat Zaatar), and non-gluten bread. One of the many great things about this za'atar is that it is gluten free, whereas many other brands have wheat. Even if wheat is not an issue for you, you'll find this to be an exceptionally good product. The customer service is great too.
